RUGGERO'S KITCHEN
From left to right: Chef Ruggero Bovo, with his wife Lucia and sous-chefs Gianluca Laudato and Mattia Trevisan, offers a traditional Venetian Lagoon cuisine, with hand-selected fish and vegetables daily. His food is known the world over for its simplicity, locally-sourced, quality ingredients, and playful presentation.

An archipelago of four separate islets, Burano was settled by the people of Altino in the 5th century, who were fleeing the Lombardian invasion. Low tides and thick fog draped over kilometres of underwater canals created a natural defence that would protect the population for centuries. This part of the northern lagoon, coined Venezia Nativa, was home to one of the largest wetland populations of the Adriatic Coast. Today, the islands of Burano, Mazzorbo and Torcello combined have a population of less than 3,000. Fishing and lacemaking are the traditional vocations of Burano.
